2 ripe avocados

½ cup diced purple onion

1 small diced jalapeno

¼ cup of finely chopped cilantro

1 ½ – 2 limes

Salt to taste

Start with your ripe avocados. You can tell an avocado is ripe, by squeezing it lightly. A slightly soft avocado is ripe, while a hard avocado is not ripe.

Cut around the middle of the avocado. The seed in the middle, will not allow you to just cut straight through.

Now here is a secret to getting the juicy middle out of the avocado perfectly each time… Some people use a spoon or knife, but I find all of those way to time consuming. Therefore, I use my own technique, I….

Squeeze it out! That’s right! I simple remove the large seed, grab one of the pieces, and begin to squeeze the avocado. Make sure your avocado is ripe, ones that are not ripe are almost impossible to squeeze cleanly.

As you can see, this technique gets every last of the creamy green inside, out!

Next, take your purple onion and dice it up very small. You are going to need ½ a cup.

For the jalapeno, you can use fresh or the ones in the jar. The jar jalapenos can come pre-diced, for your convenience. I usually use one small fresh jalapeno, or about 1 ½ Tablespoons of jarred.

Next, Sprinkle in your cilantro. The cilantro needs to be chopped very small. No one wants to pick up a scoop of guacamole and find a giant leaf hanging from the end of their chip. = )

Next comes the lime! Lime is an important part but it is also the touchiest. I would start with about 1 ½ small limes.

Stir everything together, taste it, and you think it needs more lime, slowly squeeze some more in. I find that 1 ½ is just about perfect every time. Also add in salt to taste. You are now done! Chocolate Crackle Cookies

These cookies are absolutely scrumptious! My mom and I make them all the time.

It only takes about 10 minutes to cook each batch, and the preparation is really easy.


Makes 1 ½ dozen


What you need:

  • 1 Cup White sugar
  • ¾ cup butter {1 ½ sticks}
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking SODA
  • 1 teaspoon baking POWDER
  • ½ cup unsweetened cocoa powder
  • Powdered sugar for dusting


Preheat your oven to 350 degrees

Start by creaming your butter and sugar together in a medium size bowl with an electric mixer.

Add in your eggs.

Once combined, add in your flour, baking soda, and baking powder a little at a time.


At this point, I usually spill flour all over the counter. I do not advise doing this. = )


Mix all of these ingredients until well combined.

Add in your cocoa slowly. Mix well

Roll your dough into 1’’ balls and place on a lightly greased cookie sheet.


Cook on 350 for 8 – 10 minutes.

Let them cool a little, transfer to a wire rack, then dust with powdered sugar.

A Healthy Lunch Recipe — Tuna Salad Recipe

Tuna Salad Recipe



Tuna Salad:

  • 10 oz. of solid white tuna packed in water
  • 1/4 cup mayonnaise
  • 2 Tablespoons sweet relish (or to taste)
  • Whole wheat crackers 

Start with your cans of tuna.  Open them and drain out the water.  Scoop the tuna into a bowl and chop with a fork to break down all the larger chunks.

Add the mayonnaise into your tuna and mix with a fork.



 Add in your relish, mix with a fork and you’re done!












Eat with a fork, on a sandwich, or with some whole grain crackers.

Best Pumpkin Bread Recipe Ever!


This pumpkin bread is delicious, moist, and did I mention delicious?

It is really easy, and if you are looking for a quick thanksgiving recipe to cook, or just want to make some delicious pumpkin bread…this recipe is for you! And by the way… it is super easy:      :)


Makes 2 loaves

Preheat your oven to 350 degrees


3 1/3 cups of flour

3 cups sugar

2 tsp. baking soda

1 tsp. cinnamon

1tsp. nutmeg

_____________________________________Sift all of those dry ingredients together.


1 cup oil

4 eggs

2/3 cup water

2 cups of canned packed pumpkin

_____________________________________Add all of these wet ingredients into the dry ingredients one at a time, and mix until well combined.


Now this is an important step! Grease AND flour two bread pans. 

REMINDER: If you do not do this step, your delicious bread will stick to your pans horridly!

Pour your batter into both pans, making sure to evenly distribute it.

Bake in your heated oven for 1 hour to 1hour and 15 minutes.


When the timer goes off, insert a toothpick into the center of each loaf.  When it comes out clean, it is ready!

Remove from pan and let it sit on a wire rack until cool.


This bread freezes beautifully!

Yum, Yum, Good!

Pretzel Recipe:

Serves 4

What you need:


2/3 cup warm water
3/4 tsp. active yeast
1 Tbs. brown sugar {packed}
1/4 tsp. salt
2 cups flour

{Dipping solution}

2 cups hot water

2 Tbs. baking soda


2 Tbs. butter

Coarse sea salt


For the dough, mix together water, yeast, and sugar. Let that mixture sit for 2-3 minutes.

Add in your salt and flour.  Knead for five minutes or until the dough becomes smooth.

Roll the kneaded dough into a ball, place in an oven safe bowl, and let rise for 30 minutes in a warm place. {Do not put it in such a warm place that it cooks! Been there…done that :)}


While you are waiting for the dough to rise…make the water solution. Mix together the hot water and baking soda, and stir until the baking soda dissolves.


After the dough has risen, pinch off a ¼ of dough and roll into a long rope.
Form the dough into the traditional pretzel shape. {Or any shape you want}


Dip the pretzel dough into the baking soda solution, and place on a greased baking sheet. Bake in a 450 degree oven for about 5 minutes.  When 5 minutes is up, quickly brush with melted butter and place them back in the oven for another 5 minutes until golden brown.

When they are out of the oven, brush again with some melted butter.
