“52 Weeks of Happy” {Week 10}

Picture day with friends! It was actually more than a picture day.  It would be better described as a picture, music, sewing, chicken and dumplings, with a side of cookies day! =) Super fun and great to see you all again! Valentine Scratch Off Ticket

The possibilities are endless when it comes to this scratch off ticket method! Birthday, anniversary, baby shower reveal, or in this case: Valentine’s Day!


All you are going to need is a few basic supplies:


  •         Packing tape
  •          Something to write with (pens, markers)
  •        Something to write on (I used index cards, but you can use a pre-made card)
  •         Paint
  •          Liquid dish soap
  •          Paint brush

Draw and write on your index card. Draw a shape too! This will be the thing you cover in paint to scratch off later. For example, I drew 3 hearts and wrote a adjective in each.

Now cover your index card (or whatever you are using) with tape. This will provide a slick surface that the paint will rub off of later.

Mix your paint solution. This is one part soap, two parts paint. I usually eyeball it. You do not need very much.


Mix and paint in your shapes. You may need a couple of coats.

Let it dry, and give it to your valentine!

World’s Best Chocolate Chip Cookies!

Chocolate Chip Coooookieeees!

Can you tell I love them?

Chocolate Chip Cookies have to be, so far, my favorite kind of cookie.

Here is how you make them:

Preheat your oven to 350 degrees.



3/4 c. pure cane sugar

3/4 c. brown sugar packed

1 c. butter

1 t. baking soda

2 t. vanilla

2 c. flour

Begin by creaming your butter and sugars until smooth.

Add in your eggs and beat well.

Scrape down your bowl.

Sprinkle in your baking soda…

 Pour in your vanilla…



And carefully, I repeat CAREFULLY add in your flour.




  Mix on low until all combined. {Scrape down your bowl afterwards and then mix a little more.}




 Now for the chocolate chips.  You need 1 bag minus 4 – 5 {Depending on how hungry you are at that moment!}



 Add in the chocolate chips, and mix on low.



 Now form your dough into 1 – 1 1/2 inch balls and place on a greased cookie sheet.

Bake on 350 for 8 – 12 minutes.



Remove from oven and place on a wire rack to cool.

Serve with a tall glass of ice cold milk.

“52 Weeks of Happy” {Week 9}

My happy moments this week are really just hopeful moments. =) The weather men are saying snow is in the forecast, so I’m just hoping they are right!!


I love Texas weather. The only state that it can snow one week and you can be at the beach the next!

Will it snow? Oh I hope so! The weather here gets into the 20s this week, so we have a chance! I’m so excited! PLEASE SNOW!



The first snowman! As you can see, this snowman is very small. He is about 6” tall.

Confession: He’s made more out of ice than snow. The water on our garden froze, so I scraped it up and made a wee snowman. However, his nose is really a carrot, and his eyes are really made out of coal, so it counts!

How to Microwave Popcorn Kernels in a Brown Paper Sack!

Now as much as we hate to admit it, popcorn in a microwaveable bag isn’t that great for you. I’m sorry, but it’s true!

Palm oil?

Natural flavor?

Color added?

Why is this stuff in my popcorn?!

How to make GUILT FREE popcorn!

So you might be thinking “I can never eat popcorn again!” Don’t worry! I have a solution that is just as easy as prepackaged popcorn, but without the guilt.

All you need is a:

Small brown paper lunch sack

Un-popped popcorn kernels


If you have the un-popped popcorn kernels in your hand, take a look at the ingredients.

That’s right! You guessed it!

Un-popped corn kernels!

That’s all.

Now how much better do you feel already? No added color. No artificial flavors. No Palm oil. (whatever that is!)

How to make the popcorn:

     1.      Open your brown paper sack and pour in ½ cup of popcorn kernels.

     2.      Fold the opening on your bag down a few times, and crease with your fingers.

     3.      Place the bag upright into the microwave and turn the microwave on. The time you choose to cook the popcorn all depends on your microwave. If you have no idea how long it takes, microwave it until it slows to one or two pops…You don’t want to burn your snack!
